Beef Tips & Gravy

Tender beef in a savory mushroom-onion gravy, made for mashed potatoes or egg noodles.

Comfort-food gravy that reheats moist and freezes cleanly. Portion it over a starch or on its own for a heat-and-eat bag.

Ingredients

  • 2 lb beef stew meat or sirloin tips
  • 1 tsp salt
  • 1 onion, diced
  • 8 oz mushrooms, sliced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 2 tbsp cornstarch
  • Cooked egg noodles or mashed potatoes, to serve

Instructions

  1. Season the beef with the salt and add to the slow cooker with the onion and mushrooms.
  2. Pour in the broth, Worcestershire, and garlic powder, and stir.
  3. Cook on low 7–8 hours until the beef is tender.
  4. Whisk the cornstarch with a few tablespoons of cold water, stir in, and cook on high 20–30 minutes until the gravy thickens.

Make-Ahead & Storage

Freeze the beef and gravy up to 3 months; vacuum-seals well for reheating from the bag. Serve over freshly cooked noodles or mash — freeze those separately or make fresh.

Notes

A quick sear on the beef before it goes in the cooker adds richness. A splash of cream in the gravy makes it silkier.
