Comfort-food gravy that reheats moist and freezes cleanly. Portion it over a starch or on its own for a heat-and-eat bag.
Ingredients
- 2 lb beef stew meat or sirloin tips
- 1 tsp salt
- 1 onion, diced
- 8 oz mushrooms, sliced
- 2 cups beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 2 tbsp cornstarch
- Cooked egg noodles or mashed potatoes, to serve
Instructions
- Season the beef with the salt and add to the slow cooker with the onion and mushrooms.
- Pour in the broth, Worcestershire, and garlic powder, and stir.
- Cook on low 7–8 hours until the beef is tender.
- Whisk the cornstarch with a few tablespoons of cold water, stir in, and cook on high 20–30 minutes until the gravy thickens.
Make-Ahead & Storage
Freeze the beef and gravy up to 3 months; vacuum-seals well for reheating from the bag. Serve over freshly cooked noodles or mash — freeze those separately or make fresh.
Notes
A quick sear on the beef before it goes in the cooker adds richness. A splash of cream in the gravy makes it silkier.
