Breakfast Burritos

Egg, sausage, potato, and cheese burritos wrapped and frozen for grab-and-go mornings.

Hearty handheld breakfasts that freeze well and microwave in a couple of minutes. Crisping the potatoes in rendered tallow is a genuine upgrade.

Ingredients

  • 12 eggs
  • 1 lb breakfast sausage or bacon
  • 3 cups frozen hash browns or diced potatoes
  • 1 bell pepper, diced
  • ½ onion, diced
  • 2 cups shredded cheese
  • 8 large flour tortillas
  • 1 tbsp rendered tallow or oil
  • Salt, pepper, Smokehouse rub

Instructions

  1. Crisp the potatoes, pepper, and onion in the tallow until golden. Set aside.
  2. Cook the sausage (or bacon) and drain. Scramble the eggs softly.
  3. Let the fillings cool slightly so the tortillas don't steam. Fill each tortilla with eggs, sausage, potatoes, and cheese, then fold in the sides and roll tightly.
  4. Wrap each in foil or parchment and freeze.

Make-Ahead & Storage

Freeze wrapped up to 3 months. Reheat from frozen: microwave 2–3 minutes turning halfway, or bake at 350°F for 25–30 minutes for a crisper tortilla.

Notes

Add sautéed peppers and onions or a spoon of salsa inside. Let fillings cool before rolling so the tortillas don't tear.
