Hearty handheld breakfasts that freeze well and microwave in a couple of minutes. Crisping the potatoes in rendered tallow is a genuine upgrade.
Ingredients
- 12 eggs
- 1 lb breakfast sausage or bacon
- 3 cups frozen hash browns or diced potatoes
- 1 bell pepper, diced
- ½ onion, diced
- 2 cups shredded cheese
- 8 large flour tortillas
- 1 tbsp rendered tallow or oil
- Salt, pepper, Smokehouse rub
Instructions
- Crisp the potatoes, pepper, and onion in the tallow until golden. Set aside.
- Cook the sausage (or bacon) and drain. Scramble the eggs softly.
- Let the fillings cool slightly so the tortillas don't steam. Fill each tortilla with eggs, sausage, potatoes, and cheese, then fold in the sides and roll tightly.
- Wrap each in foil or parchment and freeze.
Make-Ahead & Storage
Freeze wrapped up to 3 months. Reheat from frozen: microwave 2–3 minutes turning halfway, or bake at 350°F for 25–30 minutes for a crisper tortilla.
Notes
Add sautéed peppers and onions or a spoon of salsa inside. Let fillings cool before rolling so the tortillas don't tear.
