Cottage cheese used as a savory base rather than a breakfast food. It behaves like a thick, salty sauce under warm roasted vegetables, and the everything bagel seasoning is doing more work than it looks like it should.
Ingredients
- 1 cup low-fat cottage cheese
- 4 oz grilled chicken or turkey, sliced
- 2 cups mixed vegetables (broccoli, peppers, zucchini, red onion)
- 1 tbsp olive oil
- 1 tbsp everything bagel seasoning
- Black pepper
- Hot sauce, optional
Instructions
- Heat the oven to 425°F. Toss the vegetables with the olive oil and a pinch of salt, and roast 20–25 minutes until browned at the edges.
- Spread the cottage cheese across the bottom of a wide bowl.
- Pile the warm roasted vegetables and sliced chicken on top — the residual heat softens the cottage cheese into something closer to a sauce.
- Finish with the everything bagel seasoning, black pepper, and hot sauce.
Make-Ahead & Storage
Roast a full sheet pan of vegetables and use them across several bowls; they keep 4 days. Assemble each bowl fresh, since cottage cheese under warm vegetables doesn't hold.
Notes
Full-fat cottage cheese tastes considerably better and still comes in reasonable. Low-fat is the macro-optimal choice, not the good one.
Any leftover protein works — this is a bowl designed around whatever is already cooked in the fridge.
