A one-pot meal where the rice cooks with the meat and seasonings, so it freezes and microwaves as a complete dish — another strong take-to-work option.
Ingredients
- ½ lb ground beef
- ½ lb ground pork (or sausage)
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1½ cups long-grain rice
- 3 cups broth
- 2 tbsp Cajun blend
- 1 tsp dried thyme
Instructions
- Brown the beef and pork in a large skillet; drain excess fat.
- Add the onion, pepper, celery, and garlic and cook until soft.
- Stir in the rice, broth, Cajun blend, and thyme. Bring to a simmer, cover, and cook 20 minutes until the rice is tender and the liquid absorbed.
Make-Ahead & Storage
Cool and portion into microwave-safe containers; freeze up to 3 months. Reheat in the microwave with a splash of water.
Notes
Traditionally made with chicken livers for the "dirty" color and flavor; this version keeps it to beef and pork per the household rules. A splash of hot sauce finishes it.
