Simple baked egg cups that reheat in under a minute — the easiest grab-and-go breakfast, and a great microwave option for work. Makes 12.
Ingredients
- 12 eggs
- ¼ cup milk
- 1 cup diced ham
- 1 cup shredded cheese
- ½ bell pepper, diced
- Salt and pepper
- Handful of spinach, chopped (optional)
Instructions
- Preheat oven to 350°F and grease a 12-cup muffin tin well.
- Whisk the eggs with the milk, salt, and pepper.
- Stir in the ham, cheese, pepper, and spinach, then divide among the muffin cups.
- Bake 20–22 minutes until set and puffed. Cool before removing.
Make-Ahead & Storage
Freeze the cooled cups up to 2 months. Reheat in the microwave 30–60 seconds from frozen — ideal for taking to work.
Notes
Endlessly variable: swap the ham for crumbled sausage or bacon, or the veg for mushrooms and onion. A pinch of Smokehouse rub in the eggs adds flavor.
