Instant Pot Freezer Pulled Pork

Raw dump-bag pork shoulder, pressure-cooked from frozen and shredded for sandwiches or bowls.

Pulled pork from frozen with no thawing — cut the shoulder into chunks so it cooks through, then shred and sauce.

Ingredients

  • 4 lb pork shoulder, cut into large chunks
  • 2–3 tbsp Smokehouse rub
  • 1 onion, sliced
  • (added at cooking time: 1 cup broth or cider vinegar; BBQ sauce to finish)

Assembly & Freezing

Toss the pork chunks with the Smokehouse rub, add the onion, and combine in a gallon freezer bag. Press flat and freeze. Good up to 3 months.

Cook from Frozen

  1. Add 1 cup broth (or cider vinegar) to the Instant Pot and drop in the frozen block.
  2. Pressure cook on high for 90 minutes, then natural release for 15 minutes.
  3. Shred, discard excess fat, and toss with BBQ sauce.

Notes

Cutting the shoulder into chunks is essential for cooking through from frozen — a whole roast won't. Great on buns, over rice, or in the pork fried rice.
