Tater Tot Breakfast Casserole

Sausage, eggs, and cheese baked under a crispy tater tot layer — breakfast comfort food.

The breakfast cousin of the tater tot casserole — sausage and eggs under a crispy tot crown. Assemble the night before and bake in the morning.

Ingredients

  • 1 lb breakfast sausage
  • 8 eggs
  • ½ cup milk
  • 1 lb frozen tater tots
  • 2 cups shredded cheddar
  • ½ onion, diced
  • 1 bell pepper, diced
  • Salt and pepper

Instructions

  1. Preheat oven to 375°F. Brown the sausage with the onion and pepper; drain.
  2. Spread the sausage mixture in the dish and top with the tater tots.
  3. Whisk the eggs with the milk, salt, and pepper, and pour over. Scatter the cheese on top.
  4. Bake 40–45 minutes until the eggs are set and the tots are golden.

Make-Ahead & Storage

Assemble and refrigerate overnight, or freeze up to 2 months. Bake from the fridge ~45 minutes; from frozen, ~65 minutes covered, then uncover to crisp the tots.

Notes

Bacon or diced ham can stand in for the sausage. A little Smokehouse rub in the egg mix adds a smoky note.
