The breakfast cousin of the tater tot casserole — sausage and eggs under a crispy tot crown. Assemble the night before and bake in the morning.
Ingredients
- 1 lb breakfast sausage
- 8 eggs
- ½ cup milk
- 1 lb frozen tater tots
- 2 cups shredded cheddar
- ½ onion, diced
- 1 bell pepper, diced
- Salt and pepper
Instructions
- Preheat oven to 375°F. Brown the sausage with the onion and pepper; drain.
- Spread the sausage mixture in the dish and top with the tater tots.
- Whisk the eggs with the milk, salt, and pepper, and pour over. Scatter the cheese on top.
- Bake 40–45 minutes until the eggs are set and the tots are golden.
Make-Ahead & Storage
Assemble and refrigerate overnight, or freeze up to 2 months. Bake from the fridge ~45 minutes; from frozen, ~65 minutes covered, then uncover to crisp the tots.
Notes
Bacon or diced ham can stand in for the sausage. A little Smokehouse rub in the egg mix adds a smoky note.
